Pumpkin Pancake Recipe

This started out as an experiment to change up my favorite banana pancakes recipe. I thought it turned out really well, so I'd love to share the recipe!

Here are the ingredients you'll need for one serving (two pancakes):

  • 1/2 cup pumpkin
  • 2 eggs
  • 2 tbsp flour
  • 1/4 cup dried cranberries
  • 2 tbsp chia seeds
  • 1 tsp cinnamon
  • 1 tsp nutmeg
  • 2 tbsp coconut oil
  • 2 tbsp agave nectar
  • 2 tbsp unsweetened shredded coconut
  • 1 tbsp hemp seeds

Here's the recipe:

In a small bowl, mix together the pumpkin, eggs, flour, dried cranberries and chia seeds using a fork. 

Heat the coconut oil on a med-large pan. Once the pan is hot, pour the batter into two pancakes. Sprinkle with cinnamon and nutmeg. Cook until the underside turns golden-brown and flip over. Add more cinnamon and nutmeg to the other side. Once the bottom is also golden-brown, transfer to your plate!

Top it off with agave, shredded coconut and hemp seeds. Feel free to add any fruit or almond butter on the side!
